PIZZERIA SPEC - 60%hydration dough and above, 105 rpm & 210rpm. Intended for wetter doughs. Available in all sizes.
BAKERY SPEC - 50% hydration dough and above, 90rpm & 180rpm. Intended for stiffer doughs. Available on 80kg and larger.

The Classic Line 60 is a robust, two-speed spiral mixer built for daily production in bakeries and pizzerias. It delivers reliable power with simple, durable controls and a reversible bowl for precise dough development.
Due to high precision, all Sunmix mixers mix down to approx 10% of max capacity. So a 120kg mixer will mix 12kg of dough if necessary.
Always oversize your mixer.
